Another vote for Rose Elliott - she did one called "Cheap and Easy" which does exactly what it says. And all the recipes explain how to scale down for one or two people. Couple of used ones on Amazon at 2 quid each.
Or there's "Beyond baked beans" by Fiona Beckett - aimed at students but suitable for anyone.C'est le ton qui fait la chanson0 -
My first 'learn to cook' books were aimed at students and I thought they were excellent because the recipes were simple, affordable and (most importantly) fun!! Worth looking around a few charity shops too as there always seems to be a good selection of cookbooks to be found.0

Another vote for Rose Elliot. The bean book, cheap and easy are my 2 faves. If he's a meat eater, they can easily be adapted to include meat while still being cheap, easy and healthy.May all your dots fall silently to the ground.0
