You mentioned watching Jamie Oliver. I would wholeheartedly recommend both his Ministry of Food cook book and his new 30 minute meals one. Both are proper cooking from scratch but are easy enough and quick enough to tackle even when you've had a long day at work. Neither of them are designed to be low fat or low cost cookbooks but I'm guessing that the cooking from those recipes would be cheaper and lower in fat than takeaways. I think quite a few of the recipes can be found on his website and there are some video clips showing you what to do if you really are unsure.
