Wedding Breakfast Menus!

I need some help! We have choosen our venue, a hotel near the beach, the hotel is lovely but the menu wasn't really to our taste. The food listed on the set wedding breakfast menu is rather exotic with a lot of seafood, which isn't really what we like.
But the hotel have been great & said that we're more than welcome to come up with our own menu & they will put it to the chef. Well I started this ages ago, but it's actually a lot harder than you'd think! I'm now really stuggling with main courses & desserts & need suggestions! We already have a chicken option for the mains but need 2 others & desserts we have chocolate fudge cake but again need 2 others.
If any of you would be able to share your wedding breakfast menu's or have ideas I'd be really greatful!!

For ours, which was a set menu (aside from dietary requirements) we had:
Chicken Liver Pate
Roast Beef
Lemon Tart
It was yummy! For dessert, if you've got a chocolate dessert down already I'd go with something fruity for an option.0 -
What about good old Apple Crumble and Custard and Fruit Salad and cream for the desserts? Or Lemon Merringue pie?
For mains, it depends on what kind of food you're looking for. Do you want something fancy, or something normal like sausage, mashed potato and onion gravy? For a Veggie option, you could have a vegetable pasta?Tank fly boss walk jam nitty gritty...0 -
We're having canapes instead of a starter then a choice of roast beef and yorkies or salmon with scallops for main and the veggies will have vegetable wellington. Pudding is an assiete of desserts which is a trio of 3 different mini puds.0

I think an assiette of desserts is a good idea...should avoid complaints and it's nice to have a bit of everything.
Veggie ideas:
Mushroom rissotto
Goats cheese and butternut squash tagliatelle
Baked pumpkin with goats cheese and a tomato sauce served with veg
Some sort of mediteranean veggie pastry
Try the BBC Good Food website and search under dinner party/veggie dinner party (as I'm new I can't post a link)
Meat:
How about duck or lamb with creamed potato and veg?

Confit leg of duck, smoked bacon mash, red wine reduction sauce
Fillet of sea bass, potato cream, curried mussel fricassee
Wild mushroom risotto, rocket & parmesan salad
Roast Sirloin of beef, Yorkshire pudding, Roast potatoes,
pan gravy
OR
Breast of chicken, Dauphinoise potatoes, chasseur sauce
Roast fillet of salmon, Tartare mash, lobster bisque
Puff pastry case filled with roasted Mediterranean vegetables,
tomato Provencale, basil pesto
Roast Sirloin of beef, Yorkshire pudding, Roast potatoes,
pan gravy
