Defrosting Ham Joint - What Can I do With It?

I brought a large ham joint for christmas and put half of it in the freezer. I need to 'live off the land' so to speak this month so Im trying to think what i can make out of it.

There are only 2 of us and the joint is a little large even though its only half of what i brought :o As I have frozen it, im presuming once defrosted it has to be eaten, i cant refreeze if i make it into something?

I can use some of it for sandwhichs for lunch, but what else can i do with it and do you know how long it will stay fresh once defrosted?

Any help would be great as I would hate this to go to waste.

    Was it frozen raw or cooked? If raw then you can refreeze once it has been cooked, if cooked already you'll need to eat it up. There arloads of ham meals starting with ham, egg and chips or ham with a mustardy white sauce and veg and potatoes, you can chop it down and use in pasta like a cabonara or maybe ham and pea risotto you can also add chopped ham to omlette or fritatta. Leave your ham in a piece in the fridge wrapped well and cut off what you need, when you need it, if you pre slice it it won't last as long but should do a good few days.

    Thanks for the ideas - ham egg and chips is def on the menu, so simple but yet soooo yum!

    It was frozen cooked :( I didnt really think it through at the time :(
