Using up left-over champagne

Hello everyone,
Firstly, a Happy New Year to you all!
I've got half a bottle of champagne left from last night, and my OH and I are not big drinkers, so it won't be drunk as is. So, my question is, what can I cook with it to use it up?

I'm with everyone else - don't understand the words 'leftover' and 'champagne' used in the same sentence.

make a champagne granita.
1 pint water.
8 oz sugar.
1 vanilla pod or 2 teasp vanilla sugar.
1 lemon
1 pint champagne.
boil the water briskly with the sugar and the vanilla. and rind of the lemon, for 3 mins.
strain and cool.
add lemon juice and freeze.
when its almost frozen, mash it lightly with a fork and quickly stir in champagne and return to the freezer.
serve straight from the freezer in chilled wine or champagne glasses.0 -
