Leftover Christmas Cake - recipes needed

Hi,
Has anyone please got any recipes for using up leftover christmas cake? The more the merrier as I've loads left!

    Just eat it slowly it was a family tradition in my house when I was growing up that we should try and keep some for my dads birthday at the end of january, I haven't cut into mine yet. I did once stetch mine out till nearly easter I was really proud.
  • You could blitz it into crumbs and add some melted chocolate to make some Christmassy truffles, or break it into chunks and mix it into vanilla ice cream. I love that, and it goes back into the freezer to have a little taste of Christmas throughout the year. :)

    I agree, keep feeding it with something at 40% and it will just get better with time...

    it will keep for months or even years.

    put it in a tin and forget it, find it a year and a half later, sniff and then eat - at least that's what we did one year
