I made the above in the slow cooker with a glass of coke... mmm was lovely, however we didnt eat it all and we threw it away today 
what could i have done with the leftovers? we had sarnies out of it for a week but there was still loads leftover, any ideas on good things to make with it?
could i have made a curry with it? not sure if it would work

You could have done anything you'd use bacon for - quiche, pasta sauces, rice dishes, chicken and ham pie, hot with parsley sauce, pea and ham soup. You could even have frozen it and used it later.0

My mum mixes it with chicken and pesto and something else and makes a lovely thing to go with rice. But wrapped in foil, a week? To be honest, I'd go by the look and smell, and when it looked as though it needed using it'd be made into something and frozen. I find the problem is that there can be just too much of it, and I don't want to eat the same meat each day, even if prepared differently. I often freeze cooked meat and then defrost to make a quick pie or some type of bake in a sauce - So back to your original question, yes, you could have it curried. I would make the curry sauce and add it for a few minutes only, rather than re-cooking it for too long (or it can fall apart).0 -
I would definately carve and cut it up and freeze it in portions ready for use, as I find ham/gammon tends to go off fairly quickly in the fridge. I do this every x-mas with our x-mas gammon, as I usually buy one that's faaaaar too big for our family, and end up with loads of leftovers. YUM!0
