Squash thing !!

Hi
Can anyone help ? I still have a green pumpkin squash thing that I got in my organic veg box last week. It is not a butternut squash and I do not have a clue how to cook it or what to serve it with. Also is there any way I could cook it and then freeze it as I may not need to cook tomorrow or Thurs due to dinner at MIL and a firework party. Thanks everyone XX

Sounds like an acorn squash.

Winter squash are all interchangeable. Cook it like butternut
I've bought harlequin squash (smallish with green, yellow and orange pattern) and crown prince squash (lovely blue-grey colour) and ordinary halloween-type pumpkins from a farmshop recently and the difference in taste is negligible.

Squash freeze very well.I usually cut it into chunks and put them in a single layer in a baking tin with a sprinkle of olive oil.Cover with foil and bake in a medium [180c ish]for about 50 mins.You can then freeze it in pieces and take out as much as you need.Most of my recipes suggest you roast them first.0

I always use squash to make a stuffing filling for party or for peppers.
Dice the squash and some onion and sweat in pan with olive oil.
Add in some chopped mushrooms and some other veg eg red peppers and spinach I find work well. Add salt and pepper to taste and some herbs if you like.
Add a little water and cook until all veg are soft.
I then put spoonfuls onto a sheet of filo pastry and sprinkle some cheese. Cheddr is ok but for a speial meal feta is lovely.
Fold the filo up into a parcel and bake for 20 minutes or until pastry looks golden and middle is hot.
The prepared filo parcels freeze well and then can be cooked in same way once defosted. Perfect thing to have in freezer for fancy food for friends,l just get it out the morning of the day you wish to eat and then you have a great flash meal with minimal effort. I usually serve with new potatoes and salad. yum yum
