I have a 4kg whole salmon (I think that's about 10lb)to cook I was thinking of baking it in the oven at a low temp for about 2-3 hours, would that be the best way to cook it or a higher temp for a shorter time.

I'd cook it long and slowThe risk with cooking it higher is that the heat doesn't penetrate to the centre of the fish before the outside dries out.
I'll add this to the thread on cooking whole salmon later.:rudolf: Sheep, pigs, hens and bees on our Teesdale smallholding :rudolf:0 -
Delia online agrees with Penelope Penguin - low temp for longer time = best flavour.
http://www.deliaonline.com/recipes/main-ingredient/fish-and-seafood/salmon/foil-baked-whole-fresh-salmon-with-green-herb-mayonnaise.htmlThe way I cook a salmon is extremely slowly, wrapped in foil in the oven. I cannot recommend this method highly enough. With skin and bones, head and tail intact there is not only a captured concentration of flavours, but also a guaranteed succulent moistness that no other cooking method can produce.0 -

You could ask Waitrose to hire a salmon kettle.
I think my mother in law fills it to the brim with water and brings it to the boil and then simmers for an hour, then leaves in the kettle to cool. But might want to check that.0 -
Might be cheaper to buy a salmon kettle.... for me it's £10 in fuel to collect, £10 to return it .... or buy one for £20.0
