I have started baking all my own bread, which I love, but my waistline doesn't really 
Can anyone tell me how to work out calories/loaf/slice? I either make granary with 350g granary, 150g white, yeast and 2 tsps honey, or sourdough (HFW method-100mls starter, 250g flour, then 300g flour)
Granary gets baked in one of these and I probably get about 14 slices (if i'm good at thin slices) and the sourdough just a round loaf maybe 20cm diameter, and sliced less than a cm thick....
I am sure its a how long is a piece of string question but an idea would be helpful!

You will have to work out the calories for each item and then add them together to get a total for the whole loaf. You can then divide the total calories by the number of slices you cut from the loaf or by the weight of the loaf to get a calorie value per gram and then weight each slice you cut.
So 350g of granary flour at y amount of calories per g would be 350 times y = calories for the wholemeal flour
150g of white flour at y amount of calories per g would be 150 time y = calories for the white flour
Do this for all the ingredients and then add their values together to get the value for the whole loaf.0 -
As there is no packagng with the number of calories printed on it, I firmly believe that anything home-made - bread, biscuits and even chocolate fudge cake - actually contains no calories at all.

Ialso like to assume some calories are expended during kneading bread and...er...using a hand mixer for cakes

Assuming you use white flour, around 2000 kcal for Hugh's recipe. About 10% less on any proportion of the flour that's wholemeal.
I've posted this rather than let you work it out for yourself to thank you for leading me to the recipe at the above link: my starter (which never worked terribly well) died recently, so I'll give the River Cottage recipe a go in the new year.0 -

Thanks, I thought wholemeal actually had a higher calorie content than white, its nice to know that it doesn't0 -

It might help to think of it this way: a large part of the "extras" in wholemeal is indigestible fibre, which provides no energy at all.0 -
I got a bread maker last year for my birthday and have stopped using it as the calories per slice is HUGE.
From memory its about 200 cals a slice which is double a sliced loaf!
I used a pre-mixed bag which had the calories printed on it, this suggested that you would get 12 slices so the calories where 120g per slice, but mine only came out at 8 slices (I've given up on the useless BM now!) so that whacked the calories up per slice.
Only way to properly work it out is to find out how many calories per ingredigent (flour/butter/milk/honey will normal give per 100g) and then work it out from there. Digital scales and a calculator help.0 -
I think it must be at least twice as much as bought, bread cakes and biscuits, the issue being you just cannot possibly eat only 1 slice. I am happy to confirm that home made bread is completely calorie free and can be freely consumed in any quantity, at any time of day, without guilt or worry. As with everything that's good for you, this can require a concerted effort, but I do agree that some good butter helps to get it down.Official DFW Nerd No 096 - Proud to have dealt with my debt!0
