Red cabbage
Serves: 4 to 6
1 medium-sized washed drained red cabbage
2 large cooking apples
1 oz butter
5 tablespoons wine vinegar
3 dessertspoons water
2 oz granulated sugar
pinch of powdered cloves
salt
freshly ground black pepper
2 large tablespoons redcurrant jelly
Shred the washed and drained red cabbage, discarding any coarse outer leaves.
Peel and grate the apples (or cut into small dice if preferred/easier).
Place cabbage and apple into a saucepan.
Add the butter and shake over very gentle heat until the butter has melted.
Add wine vinegar, water, granulated sugar and powdered cloves.
Cover with lid.
Continue cooking over very gentle heat for 1 1/2 - 2 hours or until soft.
Season with salt and black pepper.
Stir in the redcurrant jelly and heat through for a further 5 - 10 minutes.
Serve hot.
