3 bags is a lot to use up - you could look at these recipes to see if anything appeals to you

I have a recipe for decadent chocolate brownies that uses Icing sugar - but also quite a bit of chocolate as well!, let me know if you would like it and I will look out the recipe (I think it was a Waitrose one - and post it)

What about making brandy butter to eat with mince pies and christmas pudd or make butter icing and using a swiss roll make a chocolate log my boys love icing mine for me and it doesn't have to be perfect.

I buy a swiss roll and make up chocolate butter icing for my DD's to cover it and decorate to make a chocolate log for christmas. It's a cheap and cheerful easy thing for them to do ready for christmas day (they don't eat xmas pud) and it keeps them amused for ages...but it does use up lots of icing sugar (we also sprinkle some icing on afterwards for snow)
  • Any other flavour essences knocking around in your cupboard? I've make stawberry creams this year with the same recipe just switching out the peppermint for strawberry and then coating with dark choc - yum. Never been fond of choc that tastes of toothpaste! but that's just me - weird!
