What about a variation of the Jamie Oliver mince pies recipe I saw on TV earlier? Roll out pastry, spread with jam, roll up like a Swiss Roll and then slice and bake.0

I made some mince pie Christmas trees at the weekend. Lay one layer of puff pastry out on a lightly floured piece of greaseproof paper (or something that you can move into the fridge), spread with mincemeat (about a jar and a half, if using a standard jar), place another layer of puff pastry on the to and brush with egg, then refridgerate for 10 minutes.
Cut in half widthways, then slice across so that you have a 6cm, 4cm, 2cm and 1cm strip, then cut those strips so they're about 1cm in width. Place one of each size in a tree shape, mincemeat side facing up and squash a little. Cook in oven for about 20mins on 200C. They're easier than they sound and taste delicious.0 -
ooooooh i made some jam turnovers the other day when i had leftover pastry from my sausage rolls, i didn't do anything fancy just cut them in to rectangles, spooned some mixed fruit jam in, folded over in to a triangle, brushed with beaten egg and sprinkled golden caster sugar on them, they turned out fan and such a cheap and cheerful recipe, i have also seen some with cream cheese in that look pretty amazing, ooooooh i will try that next time i think:):j:j:j0

do you have any whipping cream hun? if so there is a lovely recipe my sis used to make
get a sheet of ready rolled puff pastry or roll your block out to about 10 in square. cut in half to make two rectangles. stab a fork over one until its full of holes and then brush the other with egg wash and sprinkle with sugar.
place in a fairly hot oven until the one with sugar gets all nice and risen and golden - the other one should be cooked but not risen too much.
spread the flat one with loads of jam and pile whipped cream on top and then top with the other pastry rectangle. cut into slices to serve.0 -
