just thought i`d let you guys know, ive made turkish delight this afternoon for my gift hampers and it was sooooo easy thought i`d share the recipe.
375g caster sugar
juice of 1 lemon (or 2 tbsp of squeezey lemon)
25g gelatine powder
100g cornflour
25g icing sugar
oil for brushing tin
4/5 tsp of rosewater
pink or red colouring
method:
tip sugar, lemon juice and 300ml of water into med size pan, stir over low heat tilsugar dissolved then bring to a gentle boil.
mix gelatine with 75g of the cornflour and 200ml of water, add to pan and stir continuously til gelatine has dissolved, then simmer gently til thickened, (5mins ish)
lightly oil tin (8 inch square and 4/5cm high) line with clingfilm and then mix the remaining cornflour and icing sugar, dust the lined tin and tip out access (rest can be used later)
remove pan from heat, add rosewater and colouring stir well, at this stage i put cold water in sink and placed the bottom of pan in it and stirred for few mins to cool it down a bit. pour mixture in tin. i then popped in fridge and left for 3hrs.
when it was set i dusted worksurface with icing sugar mix and tipped turkish delight out, i cut about 50 fair size squares from mine (my tin was longer but narrower) i also covered some in choc, and rest in icing sugar.
honestly this is so easy with fab results, i used red dye which came out perfect colour, it also smells nasty when the gelatine is added but the end result is fine. i had trouble getting rosewater from supermarket but got it from holland and barratt (about £1.50)
will make lovely presents in a little homemade box or wrapped in greaseproof paper.
hope this helps someone

Can I ask where you got powdered gelatine from? I have not seen it around in the shops, only leaf gelatine.
Does anyone know how to convert from powdered gelatine recipes to leaf gelatine recipes?Trust me - I'm NOT a doctor!0 -

thanks, im definetly going to try and make this for next christmas
i guess you could substitute the rosewater with other flavourings too
ie violet, mint0 -
Just trying this now, thank you for the recipe. Most other recipes included cream of tartar, so sent dd out for some then found this one that doesn't need it anyway! Used lemon juice instead of rose water and only had 200 g of sugar so had to half everything. Will let you know how it turns out.0

hi, great recipe thanks- my mum loves turkish delight! i have a quick question- did you only put the lemon juice in the ones you wanted flavoured with lemon? i.e. like the yellow ones in bought packs? or did you put it in with the rosewater ones? i couldnt work out why the lemon juice would be in the recipe except for flavour? thanks!Car Boot Queen!!
