I've heard of software called WM recorder- which supports lots of formats including the ones u specified...But you hav 2 buy it...
I'll do a freeware search for u tho!

If you use Firefox, check out Video Downloader:

It's a Firefox extension which adds a little icon in the bottom right corner of the status bar in the browser window, when your watching a video on Youtube for example, just click the icon and it downloads it for you

you dont need to use any of these - youtube downloads the videos to c:docs and settings\your user\local settings\temp internet files in there you will find *.flv files, playable with the likes of VLC.
