I have a small piece of 100% cocoa solids chocolate, which is interesting, but too bitter even for me, so I think I shall make mousse.
Has anyone ever melted 100% chocolate? Will it behave like 70%, do you think?

I bought a rather expensive tin of this stuff from Rackhams for the wife at xmas one year. It got chucked in the end. To bitter! And it seemed to extreme adding a bag of sugar to sweeten it. Wish I'd known about the OS forum back then, I'm sure they'd have been a wealth of ideas for it.

I think 100% choc is often used in savoury sauces - I ate chicken in chocolate sauce once and it was FAB!

I don't understand why it isn't just compacted and powdery, but it's a very hard bar, and feels like chocolate in the mouth, but is just insanely bitter.
It came from a small specialist (and I'm guessing expensive) shop, and is simply labelled '100%'.0 -

This is great when you are on a diet and craving choc as you can't eat much of it so it satisfies the craving and totally discourages more cravings... the thought of having to eat it again is enough to scare any choccy craving away :rotfl:0
