Cauliflower & Broccoli Soup

I had some leftover veggies (bought half-price at Lidl) so decided to make a soup and it was delicious. Thought I'd share my throw-together recipe with you. I had about half a head of cauli and also broccoli left along with a couple of sticks of celery. I chopped an onion and sauted it in a little oil with crushed garlic, added the left-over veg sliced, along with two chopped potatoes and cooked for about 5 mins. I then added two chicken stockcubes, a little s+p, and filled the pan with water - a medium sized Le Crueset. I simmered until the veg was soft (and some of the liquid had evaporated) then mixed some phili cream cheese with about half-pint milk and added that to the pan along with some chopped parsely and cooked over a low heat for a few minutes. Then liquidised. Even my 14-year old DS enjoyed it.
It was one of these occasions when you don't want to throw away food so are forced to do something with it. Don't look foward to the outcome and then find yourself totally surprised by wanting seconds! I wonder if it was adding the cream cheese.

Only thing I would change (for me) is not to have stock cubes in it. They are normally full of MSG, which makes me feel awful! _pale_Ex board guide. Signature now changed (if you know, you know).0 -
I used Organic ones and the milk was organic too. However, all the rest was very cheap - even the phily cream cheese was on buy-one-get-one-free at Tesco. Thats why I am Organic Wanabe - would have everything organic if my purse could stretch to it.0
