Thanks for all your suggestions. My son and I have found a recipe for Moroccan Lemon Chicken with a cranberry couscous so that should tick all the boxes. Don't fancy it myself so I think I shall buy enough ingredients to just serve 2!

Sorry to be a pain
but just been shopping and couldn't get preserved lemon from a jar of Packman Grey Preserved Lemons.
What can he substitute for the preserved lemon?
Would grated lemon zest be any good?
Never used preserved lemon before so I've no idea of the difference.

Waitrose and bigger Sainsburys (on the sort of expensive gourmet shelves) sell them, nothing really replaces them, because they are pickled.They are absolutely delicious...I like to eat one whole and straight from the jar every now and then:D They really are worth seeking out. You could try using lemon juice and zest for a lemony tang, and add salt and perhaps a little vinegar, perhaps white wine vinegar for the tang.
