Christmas cake when to ice?

    Still think I have better things to do Christmas eve than to ice the cake .

    I usually marzipan it around the 18th-20th, then ice it on Christmas Eve. We never eat it on Christmas Day so it doesn't matter if it's not set properly by then!

    Mine is still in the foil, have not got a tin big enough.

    Still glad you haven't done it , you still have a few days left.
  • Can i just ask when i marzipan it can i wrap it up in foil again?

    it wont stick to the foil or anything will it?

    Yes, I just wrap my cake up in the same foil after I've marzipanned it, there might be a few tiny cake crumbs on the foil which may mark the marzipan but it doesn't really matter if you intend to ice over it, or if you prefer, use some clean foil. Foil doesn't stick to marzipan, but it will stick to wet icing! Remember to dust your worktop and rolling pin with a bit of icing sugar to make the marzipan easier to roll out.
