Does anyone have the recipe for Huge furry whashisname's chips please? Thought I'd saved it, but can't find it now.

    Mioliere very kindly gave me the recipe a little while back - I've cut and pasted her reply to me:

    "Peel and slice potatoes into fairly chunky chips. Place in a saucepan, bring to the boil and boil for 8 minutes. Drain. Meanwhile, in the oven, heat a roasting pan containing a good layer of oil (I use sunflower), tip the drained potatoes into the hot oil - make sure you spread them out - and cook for about 45 minutes, turning once or twice. Drain on kitchen paper before serving.

    My oven is electric and I find 190 degrees is about right. Hugh FW used a metal roasting pan, so that's what I use just to be sure! The chips I've made this way have always been really delicious."

    Ohhh, they sound yummy, gonna give them a try. Thanks very much. Got some chunky cod in the freezer, so I'll go soak some peas for the mushies to go with it.

  • Yum I don't often have chips but a few now and again won't hurt. My son-in-law cooks them like tihis but doesnt peel them he scrubs the spuds and cuts into chunky slices.sprinkles with fresh black pepper and sea salt when they go into the oven to get that 'rustic' effect.

    Once you cook them for a few minutes, if you then cool them rapidlly in iced water, you can then dry them on a cloth, stick them in a bag with a teaspoon of oil, shake them about to get them all coated in oil, then freeze individually on a tray, when they are frozen bag them up.
    Your own frozen oven chips! Great for using up gluts of potatoes.

    Not strictly chips, but new potatoes roasted with olive oil and (in the summer when I can get them from the garden) mint and chives, or salt, go down really well!

    A bit unusual but very tasty!

    if you boil in veggie stock (or whatever you like) this adds a lovely flavour

    For those of you watching the calories then Slimming World chips are very similar. Instead of parboiling, I microwave the chips first for about 7 minutes. Then spread on a baking tray and spray with frylight (or similar). You can sprinkle spices or other seasoning over them too. Just cook in the oven in the usual way.
