bacon rib soup

Hi,
Can anyone help me, my Mum used to make lovely bacon rib soup, but I cant remember how she did it, can anyone please help,

    Hi there, pretty good at coming up with recipes. helped a few people on here. Can you remember colour/consistency etc and I'll help you put a recipe together.

    Ham Bone Soup
    Total Time
    6 Hours 30 Minutes

    Servings
    4

    Ingredients
    1 ham bone with some meat
    1 onion, diced
    1 (14.5 ounce) can peeled and diced tomatoes with juice
    1 (15.25 ounce) can kidney beans
    3 potatoes, cubed
    1 green pepper, seeded and cubed
    4 cups water
    6 cubes chicken bouillon
    Instructions
    Place the ham bone, onion, tomatoes, kidney beans, potatoes, and green pepper into a 3 quart or larger slow cooker. Dissolve the bouillon cubes in water, and pour into the slow cooker.
    Cover, and cook on High until warm. Reduce heat to Low, and continue to cook for 5 to 6 hours

    I think she used a packet of some dried pulses and veggies, it was pretty thick, maybe an orangey?????????????????????? colour, sorry cant be more specific it was such long time ago! Hope you can help, thanks

  • My dad made lovely bacon rib soup - he used to boil the ribs which we would eat with cabbage and potatoes, and then he used to use the cooking water to make soup by adding chopped onion, grated carrot, any leftover meat (he used to keep a couple of ribs back) finely chopped celery, a couple of dried bay leaves, white pepper and a mixture of dried split peas and lentils. He used to soak the split peas overnight but not the lentils and for a huge big panful he used to use a mug of dried split peas and about three quarters of a mug of dried lentils. When it was all cooked the peas and lentils would be dissolved and he would then remove the bay leaves and blitz the soup, but not to make it totally smooth.

    These are red split lentils. You can buy a packet stew mix for about 60p a packet which will last ages. This usually includes lentils, plus split peas, pearl barley and the such. Add toward the end of cooking if not using a slow cooker as the lentils tend to sink to the bottom of the pan and will catch on the bottom. Just follow cooking instructions on the packet.

    You can also buy frozen stew packs of veg if you don't fancy peeling the root veg and add that to the ham bone when cooking.
