How are you going to cook it? Need to keep it moist...
  • I will stuff with cranberries and bacon and slow cook for about 3.5 hours with the last half hour uncovered. If it all goes wrong we will just have to have extra roast potatoes and a sense of humour!

Sounds good - I would add some steam, eg water in a baking tray at the bottom of the oven if you have room, goose can be quite dry

I first bought a frozen new year Goose at LIDL 2 years ago and it was very nice, tasty and tender. Last years Goose however was very chewy but was from Hungary. I'd imagine Germany has quite high welfare standards. Also, I weighed my goose last year after cooking and 4kg turned into 1.9 kg of cooked goose - but you can strain and keep the fat for cooking. It has so much fat, keeping it moist will not be a problem- in fact you need to !!!!! it well to let the fat drain off.

Hi, Caroc is correct, you will get a lot of fat of a goose. The best way to cook it is (slowly) on a rack with an empty roasting tin under it to collect the fat as it drips off.

Also remember you will only get about half the meat, that you would get from a Turkey of the same size - delicious though.
