how do you cook yours?

Hi all
im after a bit of inspiration im not a bad cook my meals for the family are a mixture of o/s and outta the jar.im gettin into batch cooking (now need a bigger freezer!) and menu planning .
my quandry is that ive got a small beef joint topside/toprump that i want to roast usually i just lob it in the oven on low covered in foil ,baste a couple a times then eat when done but it shrinks loads just wondered how other people roast their beef and can i pinch your ideas

Im rubbish at doing beef joints, but my dad is the best ever. He usually heats a little oil in a frying pan and when its hot, rolls the joint in the oil so it "seals" the blood in. He reckons this prevents shrinkage. The other thing to say is that do you think you overcook it- ( is it still a bit rare in the middle or not- is any of it tough) sometimes this can make it shrink as well

Hi Katie Jane,
I often pot-roast beef.
This is best done in a pot that can go on the hob and then in the oven afterwards (saves on washing up as well!).
Heat some oil in a large casserole and brown the meat well all over, remove the beef. In the same pot brown some onions/carrots/celery (and/or anything else you fancy).
Put the beef back in on top of the veg and add some liquid - the choice is yours! Possible options are stock, wine, beer or a mixture of them (although I don't know about wine and beer mixed together!)
You want the liquid to come about half way up the joint.
Cover tightly and put in a low oven (gas mark 1 or 2) for about 3 hours.
Mmmm lovely and tender.
The 'gravy' from this will be quite thin so if you want to thicken it, take out the meant and veg and boil with the lid off until reduced to the right consistency.
