General cookie receipes should be OK, just drop a spoonful of cookie dough onto a baking tray and they will flatten out in the oven.
here's one recipe. http://www.bbcgoodfood.com/recipes/7655/oaty-raisin-cookies you could maybe leave out the honey if you don't have it.

Most cookies are fine just dropped on a tray or roll into balls with your hand then squashLiving cheap in central London :rotfl:0

I went for ages without a rolling pin when we were setting up home from nothing and on very limited funds.
I'd do scones by just patting the dough flat (it's best not to overwork it anyway) and, if I really needed to roll something, I'd use a flat tumbler or a bottle.
If you're wanting to bake some biccies, there's also "refrigerator biscuits" where you shape the dough into a sausage shape and cut slices off to bake. No rolling required. Sorry, I don't have a recipe to hand but Google should find you one without too much difficulty.Avoiding plastic, palm oil and Nestlé0 -
Fork Biscuits, and Mary Berry's ginger biscuits, are two that spring to mind, but I don't have any recipes to hand. You basically just roll the dough into a small ball and press down with a fork.0

A wine bottle will double nicely as a rolling pin if you need one, but most biscuits can be made without. If you've have not made a mistake, you've made nothing0

One of our family favs is:-
Cornflake Cookies
(great for using up the last of the cereal)
1½ oz butter or margarine
3 oz caster sugar
1/2 teaspoon vanilla essence
1 egg
2 oz plain flour
pinch salt
1 teaspoon baking powder
2 oz corn flakes
Cream the butter, sugar and vanilla essence together until light and fluffy.
Beat in the egg gradually. Sieve flour, baking powder and salt and add corn flakes mixing well.
Put teaspoonfuls onto a greased baking tray, leaving a space between each for spreading.
Bake in a moderate oven (180C, 350F, Gas mark 4) for 10 - 15 minutes.
Remove to a wire tray to cool. Our days are happier when we give people a bit of our heart rather than a piece of our mind.
