Powdered caramel colour

I am hoping to make pumpernickel bread from 'Artisan Bread in 5 min', and it asks for caramel colour powder.

I have been thrawling internet for past hour or so trying to find it, but to no luck. Anyone has any idea where I can find it?

I've never seen it. Have you tried sugarcraft suppliers? If you can't find it, and it's only used as a colouring, I'd make the bread without.

Ok, I'll try. I think it is to give the bread more deep colour. Although I did read on some US websites that it adds something to taste. I need to go to the shop to get some molasses, but probably will do that tomorrow, so can try and make the bread on Sunday!

You could use gravy browning (not gravy powder), it is mostly caramel. Or a teaspoon of cocoa powder might work, I often put it in stews when I run out of gravy browning, to give a better colour. Or make your own caramel by heating sugar until it is the colour you want - the longer you cook it, the darker it gets, then add that instead of the sugar you would use for the yeast.

As this has fallen from the front page of OS, I'll move it to the Grocery Shopping Board, where you might get more suggestions :)

Hi, Martin’s asked me to post this in these circumstances: I’ve asked Board Guides to move threads if they’ll receive a better response elsewhere (please see this rule) so this post/thread has been moved to another board, where it should get more replies. If you have any questions about this policy please email !!!!!!.

I would also vote for emiff6's suggestion of gravy browning. It's basically just salt and caramel, so take the salt into account when making your bread, otherwise with too much it won't rise. If you wanted to avoid the salt, and have got some bog standard food colourings at home, then just add a few drops of red, blue and yellow, which will give you a brown colour. If you don't mind adding a bit of coffee flavour, then strong black coffee will also add a brown tinge. And finally, dark treacle is fine in cakes for colour, but probably much too sweet for bread!

I have made the bread last night and just omitted the caramel colour. It already asked for cocoa and instant coffee, so I just used those. The bread is very tasty and nice brown colour.

    Thank you all!
