I made a few batches of meringues today so to use up the egg yolks I made 4 victoria sponges. They are now cool and cling wrapped. How long can I keep them for unfilled?
We are having guests over the weekend and I'd like to use them on Sunday with a mascarpone and raspberry filling - just not sure if they will stay fresh that long?

No idea hun, but personally I would play safe and freeze them straightaway, then take them out Saturday night/early Sunday morning and then let them defrost and fill them.0

probably safest to freeze I guess - I just need to find a little space for them.
I don't know if it's just me but I'm so dashed organised I've cooked, baked and frozen every type of food to the point that I now have 2 freezers full yet I keep forgetting to take things out to defrost and then wonder what we are going to eat. Ah well, at least we won't starve!0 -
where i used to work we kept cakes for up to 2 weeks in cake tins. put the filling in just before use though."The purpose of Life is to spread and create Happiness" :j0
