making mince pie questions?

I haven't made mince pies since I was very young so fancied doing some this year. We are going to use supermarket mince after working out how much it would cost to buy all the bits (I was looking at the hairy bikers version). I had 2 questions, does anyone have a favourite recipe for the pastry, and instead of doing them in the usual shape I was thinking of using cookie cutters and sealing them around the edge with the mince in the middle, do you think this would work? I've made a load of mince pies this afternoon - well mince tarts really. I've used a mix of puff / shortcrust pastry and I'd say shortcrust was the best. I don't do the tops because I like to have brandy butter on the top of them. Serve them warm and its to die for !! xxMe, OH, grown DS, (other DS left home) and Mum (coming up 80!). Considering foster parenting. Hints and tips on saving £ always well received. Xx

My favourite pastry for mince pies is rose pastry. I use butter for it instead of the marg in the recipe. It makes a truly melt in the mouth mince pie and beats anything you could buy hands down"Who’s that tripping over my bridge?" roared the Troll.

I usually make shortcrust pastry with my normal amount of butter + lard but enrich it with an egg yolk - I use the white lightly beaten to brush the tops and then sprinkle on some granulated sugar. everyone loves them warm from the oven, except me - I hate mince pies!0
