Quince Jelly not setting

Help. My mum spent all yesterday evening making quince jelly. It was the japonica quinces..small, apple like ones. She followed instructions perfectly but despite boiling it for ages the jelly is still quite runny. Is there anything she can do:confused:

It tastes lovely and I'm sure we will use it even if we can't rescue it but.....there are 10lb of it:rolleyes:

  • You could try adding some lemon juice and reboiling for a while, that may do the trick.

    They're not particularly high in pectin, so I used to add some apples to the mix. Perhaps you could chop up some apples now, and cook them in very little water so you don't dilute their pectin, then add that to the jelly, if lemon doesn't solve the problem.
