ok i admit it i always used to use a pack of chilli powder stuff. but one day i wanted a chilli and didn't have a pack in so i invented my own. and it is yummy , best ever.
i always make a huge bulk of it , so i use a 1.75kg bag of mince, ( whole bag ) plus 3 normal size onions, fry until mince brown. then i add 5 tins of value kidney beans , 4 tins of value chopped toms, a table spoon of mild chilli powder, a good sppon full of sugar and then about 250ml of water, mix it all up and leave to simmer for about and hour or 2. and then i freeze into 2 person portions and i usually get about 10 -13 portions from this.( we do have big appetites tho )
i will serve this with rice and grated cheese and sometimes i also buy tesco value tortilla crisps for 19p a bag.
i think i worked out that to make my chilli in the bulk that i do , it costs about 13p person per serving. not bad in my eyes.0 -
I've been making chilli for years - variations on all of the above.
Recently I made one from a Disney cookbook ("Cooking with Mickey vol 2" off the top of my head, may not be exact title). It's not cartoony but is a selection of recipes from restaurants in the theme parks and hotels.
ANyway - back on topic.
At the end of the chilli recipe it recommended putting in a handful of breadcrumbs. It was great. I was really sceptical but will always do this now (though I won't use the tomato ketchup every time as was also in the recipe.)"You can't get a cup of tea big enough or a book long enough to suit me." - C.S. For years I made chilli which was basically a bolognese sauce with kidney beans, green & red peppers and some chilli powder.
I then saw a recipe in the Sunday Times which i tried which is very nice...makes a lot but you can either freeze or make half the quantity.
1kg mince (I use half pork mince and half beef mince) browned
2 diced onions & 3 garlic cloves added and sweated with the mince
Add 1 tsp paprika, 2 tsp cumin, chilli to taste (I use 2 tsp 'lazy' chilli from a jar)
3 tins tomatoes
2 tins red kidney beans
half pint red wine
3 fl oz vinegar (either brown malt or red wine vinegar)
2 bay leaves
salt & pepper
Bring to boil and cook in oven at 160 degrees for 1.5 to 2 hours or on stovetop (I'm sure this would be also great in a slow cooker).
It's probably not for everyone but I love it.0 -
I love the Jamie Oliver version from his Happy Days book. It is lovely!
