calamari - how to cook??

i would love to try cooking calamari at home but when i did recepi search i got a bit baffled. Anyone got a good way of cooking it? also could i use the same batter for onion rings and how do i do those? i know this sounds really stupid but i only tasted onion rings for the first time last week and i'm 27 years old!!!!

    mmm...squid;)
    Cut the body into rings
    on a plate put flour, salt and pepper
    Dust the rings in the flour until well coated
    Fry in a deep fat fryer which you have heated up ready
    They will cook really quick - just watch til the flour starts to brown.

    Alternatively, take the calamari and throw in a pan.

    Add quarter pint of white wine and stir on low heat for 1 minute.
    Add quarter pint of rum and stir on low heat for 1 minute.
    Add quarter pint of single malt whisky and stir on low heat for 1 minute.
    Add quarter pint of vodka and stir on low heat for 1 minute.

    Throw away dreadful, rubbery stuff and drink the sauce...

    You either have to cook squid really quickly or really slowly, then you will avoid the rubberiness:)

  • I do it in a tomato sauce with ginger and garlic, maybe a few capers and serve it with pasta. Luvely!

  • I believe that soaking squid in lemon or mashed kiwi for a few hours before cooking make a big difference to the texture, the acid softens them up!
    (i've not done this myself but I believe it works like a charm)
