I have just made some cocnut ice (as per recipe on the OS recipe thread). Question is - how do I get it to set? Do I have to put it in the freezer?
My logic is that is where the 'ice' bit comes from?!

Love your logic!!
But, no, you need to put it in a 'cool' place to set, but not necessarily the 'fridge.
Once set, store it in an airtight container in a cupboard.
