These are one of my weaknesses when I fancy a treat and I do resent paying such a high prices for them, especially as they're VATable and will become even more expensive in January.
Does anybody know how I could reproduce them at home? Any special techniques such as fine slicing potatoes with a food processor, and how to dry bake them as they don't appear to use much oil in the cooking?

Hi Primrose,
To get the crinkles I think you would have to have a slicer on your food processor that would produce the crinkle effect.
I use potato peelings to make crisps, they are delicious and very nutritious: Preheat the oven to it's highest temperature...mine is 250 degrees. Dry off the (scrubbed before peeling) peelings with kitchen paper, put them in a bowl add some chilli or garlic powder (optional) and toss around in some olive oil. Spread them out on a baking sheet in a single layer and pop into the hot oven for about 10 -15 minutes. You need to keep a really close eye on them as it's a fine line between being undercooked and burnt! Drain on kitchen paper and add salt and pepper to taste. My kids love them!

Some of the dry baked crisps eg Walkers are not made from whole potato, but a reconstituted mash mixture which is then made into the crinkle shape and baked. Ive no idea how you'd try to emulate them, maybe using instant mash with added spices and herbs and spread thinly on a baking sheet?

If you click on a packet and then turn it around you will see the ingredients. The first part is the crisp I think, there's potato flakes and veg oil and the rest is mostly flavourings and seasonings and water of course, which will have cooked off so doesn't appear in there. I don't know how much oil to add, but instant mash is pretty cheap (15p for basics/value) so you could easily experiment til you get something similar, maybe make up a small batch and add 1 tablespoon, cook in oven and add more if necessary (you don't need to waste the seasonings at this point). Please report back if you do go ahead, I'd love to hear whether this works.
