You can make one using quark instead of cream cheese, it sets much quicker. Mix the quark with sugar and lemon juice+rind/vanilla/angel delight mix/cocoa powder and spread on a normal biscuit base, it will start off very soft but sets like a cheese cake in 20-30 mins. Quark is ~70p per 250g, the best kind for cheese cake is Sainsbury's be good to yourself quark which is found near the cottage/spread cheese.
It's also MUCH healthier than normal cheese cake, quark has virtually no fat and loads of protein.

I got a free recipe booklet with my stork, which has a creamy lime cheesecake recipe on it,

    Preperation time : 20 mins
Baking time 45 mins which would take her just over the hour, but she could rush :D

its here hope that helps xx
  • Mascarpone filling (with a splash of icing sugar) is delicious and quick. Not so cheap, though.

    Cheat.
She can make the biscuit base.
Top with a mixture of Philly cheese and nutella.
Tastes fab, has cheese, therefore it's a cheesecake.
She could decorate it with chocolate curls etc.
  • If she can do a cooked cheesecake this is a quick, easy recipe http://www.bbcgoodfood.com/recipes/3842/baked-raspberry-cheesecake I made it in a food processor so bit quicker. Raspberries might be expensive at this time of year so maybe you could substitute for for something else.

    Easy cheesecake ....
    .
Usual digestive biscuit crumb and butter base.

Make up a sachet of Dream Topping with milk as directed and beat in a small pack of cream cheese. That's it!
Tastes better than it may sound to the purists ;)

Topping of choice. (tin of blackcurrant pie filling is nice)

    Simple!
  • She could make upside down cheesecakes and be a bit different. In individual glasses or little pots put a fruit compote type of thing in the bottom. I use our raspberries cooked in a little sugar, but strawberries or blueberries or similar would do. She could do that bit at home and take it in as an ingredient. The next layer is a 50/50 mix of Philly and double cream well mixed together. Then top with crumbled up digestives artfully arranged.

Easily done within an hour as it doesn't need to set really. Always goes down well in our house.
