Made a no cook Rocky Road cake.. can I freeze it?

Hi all,
As title I've made a no cook Rocky Road cake (chocolate, digestives, marshmellows, glace cherries). It's really rich and it's not all going to be eaten. Can I freeze portions of it?

  • This is absolutley no help, but that sounds amazing and there would be no need to freeze it in my house, I would eat it all!!

    LOL. It normally wouldn't be left over in this house but it is really blooming rich. Gorgeous though :D

    I suspect the digestives will go soggy, and I am not sure about the marshmallows. Why not put a smallish piece in the freezer overnight and see how it is after defrosting it again tomorrow, then if it is ok you can freeze any other leftovers.

    It should be ok for a week in the fridge. i have had some a week before. And last xmas i sent some to my sister but because of the snow it took a month for her to receive it and her hubby still ate it!!! Not sure i would have but it will certainly keep for a week in a air tight container.
  • I'd think the digestives will be the first to go off and they last a good while in an airtight container. Should keep a good while in the fridge. I'd probably eat it after a month, so long as it tasted OK :D

    Got a nice recipe? Been ages since I had this.

    Thanks all, my daughter & I found a very easy and tasty recipe on the BBC Good Food site HERE. We also added glace cherries. Mmmmmmm :drool:
