Hi all,
As title I've made a no cook Rocky Road cake (chocolate, digestives, marshmellows, glace cherries). It's really rich and it's not all going to be eaten. Can I freeze portions of it?

This is absolutley no help, but that sounds amazing and there would be no need to freeze it in my house, I would eat it all!!0

I suspect the digestives will go soggy, and I am not sure about the marshmallows. Why not put a smallish piece in the freezer overnight and see how it is after defrosting it again tomorrow, then if it is ok you can freeze any other leftovers.Trust me - I'm NOT a doctor!0

It should be ok for a week in the fridge. i have had some a week before. And last xmas i sent some to my sister but because of the snow it took a month for her to receive it and her hubby still ate it!!! Not sure i would have but it will certainly keep for a week in a air tight container.0

I'd think the digestives will be the first to go off and they last a good while in an airtight container. Should keep a good while in the fridge. I'd probably eat it after a month, so long as it tasted OK
