Mascarpone has been frozen.

Partner put my mascarpone in the freezer, will i still be able to use it ?

    I have never tried freezing mascarpone, but I don't see why you shouldn't try it and see - take it out of the freezer, let it defrost, stir in any liquid that separates and then taste it. If it tastes ok, use it up!

    I would imagine the texture will be changed, but that shouldn't be a problem if you are cooking with it! It certainly won't be 'off', if that's what you are worried about.

    Yes it will be ok, I've seen it mentioned many times on various threads - a couple of mentions here and here on the freezing tips thread

  • OMG! I had some the other day and I didn't freeze it... and it went off!!!

    I did the same with Morzorella too!!!

    so when I used half the other day even though it doesn't say you can freeze either, so a diced it and bunged it in the freezer! I wasn't going to let it go to waste!!!!

    Mascarpone can be frozen, but it may separate when defrosted. It can be re-emulsified, by whipping it vigorously with a wire whisk while it is still very cold.

    Freeze fresh, soft cheeses, such as mozzarella and goat cheese, in their original packaging, or wrap them tightly in plastic wrap and put that in a zip-type storage bag before freezing. They should be eaten within about two months and be thawed in the refrigerator.
