Xbox availability??

I'm having a minor wobble about Xbox availability... last week, there was availability everywhere, a great bundle deal on Amazon and I saw the 250GB in Costco at a great price. My DD was undecided until only recently about what she wanted from Santa (PS3 or Xbox), but 2 nights declared it was an Xbox.
We're on a limited budget, so off I went to Amazon to order, and the console says 'delivery in 1 to 3 months!' (not much good for xmas!). So off I went to Costco today, and they're all gone!
What's everyones thoughts on these.. do you think they will come back into stock at these places? Or is this a blip due to the launch of the Kinect platform today? I'm loath to spend the inflated prices from other retailers... for example Game have upped the price of a bundle I saw by £20 overnight!
We're looking for the 250gb, preferably with a game such as Fifa11.
Any thoughts/advice appreciated.
