Aduki beans

I want to make some soup today, but couldnt get any broth mix yesterday. I've got lentils and aduki beans. I soaked the aduki beans last night, but am having second thoughts about using them in my soup.I dont need to soak the lentils. I'm using streaky bacon and the veg I'm using is celery,carrots,turnip,parsnip,leeks and spuds.I will season it with boullion. My question is, will the aduki beans add to the taste of the soup or spoil it, has anyone ever used aduki beans in a similar recipe to the one I intend using? Thats 2 questions now :rolleyes: If I decide not to use the beans, I'll just cook them then freeze them to be used in a sausage casserole at a later date. Thanks in advance for any ideas/advice.

    I use aduki beans all the time now and love them, I also chuck any pulses into soup and it gets polished off at our gaff! I'm sure it will be delicious.
    BTW, they are very nice mixed with mince to spin it out a bit as they are brown and blend in well 'colourwise' I put some in a spag bog last night and nothing was left!
    Sainsburys sell 3 tins for £1 at the mo...

    Thanks Liz, I'll put some in with my soup. I soaked the whole bag as it had been open for a while, so will also freeze some and when I make a bolognese next week I can put some in it, I never thought of doing this before :T

  • If you cook up the aduki beans with some rice, add in carrot etc you can get away without the mince. DS didn't know until I told him that the dish didn't even contain an oxo cube let alone any mince. I use Sarah Brown's recipe and I will pm it to you if you want.

  • Dolly's adaptation of Sarah Brown's Red Dragon Pie

    Red Dragon Pie

    Recipes Ingredients:
    4 oz Adzuki beans, soaked
    2 oz rice, soaked
    Garlic
    tspn Oregano
    1 tb Vegetable oil
    1 tspn Basil
    1 md Onion, chopped
    1/2 ts Marjoram
    8 oz Carrots, finely chopped
    275 ml Bean stock
    1 tb Soy sauce
    Salt & pepper
    2 tb Tomato paste
    1 lb Mashed potatoes


    Recipe Instructions:
    Wash the beans & Rice in plenty of cold water.
    Combine about 4 cups of water with beans & Rice & cook for 5o minutes or until the beans are soft.
    Drain, reserving the stock for later.
    (Dolly's adaptation - have beans cooked already and add about 4oz (cooked weight) of rice)
    Heat oil in a large frying pan. Fry the onions for 3 minutes.
    Add the garlic and cook for 1 min.
    Add the carrots & cook covered for 5 minutes.
    Add the cooked beans & rice. Stir well & let saute for a few minutes, ensuring that the mixture does not burn.
    Combine the soy sauce, tomato paste, herbs & stock.
    Mix well & pour into the pan.
    Bring to a boil, reduce heat to very low, partially cover & simmer gently for 30 minutes, stirring frquently to prevent it burning. Add more stock if necessary.
    Transfer into a casserole. Top the cooked Vegetables with mashed potatoes. Bake in a preheated Oven at 350F for 40 minutes, or until the potatoes are browned. Serve with Vegetables or a green salad.
