  • If I want an easy recipe I always look on the BBC recipe guide. Most the recipes come from Ready Steady Cook and are easy to follow and usually contain ingredients that you have at home:

Great thread! I'm a bit disapppointed with your non-OS rice, though, Tigs:naughty: Anyone want a recipe for biryani?

Basically, fry an onion. Add cumin seeds (not powder!) turmeric and cloves and fry off. Onion seeds and mustard seeds (from an Indian shop) are also nice, but not essential. When the onion is cooked and seeds popping, add Basmati rice (1 cup for 2 people) and water (about 1.5 cups) and cook. YUM! :T (Cheapest place for Basmati tends to be Lidl or Iceland)

The idea is that all the water boils off. Add more water if you need it (it's more difficult to take water away! ;) )

PS I agree with the view that Pataks pastes are totally authentic - and they're used in most Indian households nowadays, it seems to me! :D

I agree about Basmati, it's just right with Indian food, although I prefer long grain with chinese. Do you steam the rice, a friend of mine does & does similar to you & rice has gorgous nutty taste. I've always ruined rice when I steam, so I don't try anymore but I do take off heat a good five minutes before ready & when no liquid seeems apparent & allow to steam within its own heat.

I cant agree with you on sauces though, a good authentic sauce can be made very cheaply, although it takes time.

While a great chinese sauce which is both quick & cheap. I large mug half filled with tomatoe or brown sauce or mix of two, depending on taste add garlic, ginger, all spice, chilli, a bay leaf etc top up mug with viniger (once cooked the taste will burn off) add a tea spoon of honey or marmalade or if none half tea spoon suger & add to stir fry a few minutes before serving. I've had Asian friends asking for this recipe it really is a great cheap sauce for stir fry meat & or veg.
