I usually buy some cheapo stuff and add things like a shot of brandy or some chopped nuts. If you don't have alcohol or tea why not add some cranberry juice as the liquid?
As for the suet/vegi suet/trans fats issue, I think they all will be as it is a fat that has been altered from liquid to solid. I have seen several recipes where you substitute fat with chopped soaked dates, this ought to work in mincemeat but you won't get that solidifying effect which comes froim the fat melting then re-setting :)
Would it be so bad if you used suet or veg suet, seeing as you have cut out the fat in other areas of your diet? As long as you keep the number of pies down...;)

I can really recommend the recipe that I use, I have always made mine as I don't like the candid peel that shops put in it :D

    Home made mince meat
    8oz raisins
    8oz sultanas
    8oz currants
    2oz apricots, chopped
    2oz glace cherries, chopped
    2floz brandy (or sherry, whiskey)
    1 medium pear, chopped
    1 eating apple, chopped
    ½ teaspoon ground cinnamon
    ½ teaspoon ground nutmeg
    6oz molasses sugar
    2 tablespoons water
    2 tablespoons lemon juice
    2 tablespoons margarine
1: Put raisins, sultanas, currants, apricots and cherries into a bowl with the brandy (or which ever spirit you have chosen). Mix well, cover and leave for 4-6 hours
2: Blanch the chopped pear and apple in boiling water for 2minutes. Drain well and add pear, apple, ground cinnamon and nutmeg to the soaked dried fruit, stir well.
3: Put molasses sugar, lemon juice, water and margarine in a small saucepan. Heat gently, stirring frequently, until sugar has dissolved. Add the syrup to the fruit mixture and stir.
    Done.

I always make Delia's one and don't forget you can make and give as presents to teachers etc from little ones. Pretty the jar up and that's a lovely present.

Delia Smiths Christmas Book - IS my bible for Christmas recipes!
DTD - Doing Tesco Daily - while I still have vouchers!
  • I also use a Delia recipe - but it's the one from her Winter Collection as that has Cranberries in and my family love them.
I've actually just mixed in all together this afternoon and it's standing in the garage (cool place) overnight and I'll warm in through tomorrow. It's smells so good and christmassy doesn't it?:xmassmile
