You could dry it. Spread the leaves on a baking sheet and put in a low oven until dried out, then store in a jar to use when you need.

    Hi suzie.

I am so envious...my basil was gobbled up by slugs this year. :o There's an earlier thread with ideas for using basil that may help so I've added your thread to it to keep the ideas together.

    These threads may help too:

    Preserve fresh basil

    Can I freeze basil?

In salad, make pesto, put it in anything tomato-ey; soup, saoce, salad, I like it in a salad sandwich or a wrap, here is a link to allrecipes basil page

You can grow basil for quite a long time during the year, just you have to have it under cover in spring and during autumn. So window sill at those colder months and in the garden during the summer months. You struggle the rest of the year because of low light levels.

Its great in med cookery ie. italian and spanish type dishes. Fab with any tomato based dish, but I also like softer herbs like Basil,Parsley, mint etc in salads.
