Re-Mortgage advise please

Hi my mortgage is coming to the end of its fixed rate deal at the end of December and will automatically change to a variable rate which at the current rate is cheaper (almost half) then what we are paying now. The fact that the interest rate is so low at the moment is it wise to stick with this and pay of some of the capital of (we are interest only at the moment), and then change to a fixed rate again when the interest rates start to rise again.
I would be grateful for help and advise with this.
