Stuffed Mushrooms/peppars

I've searched and gotten nowhere for stuffed mushroom recipes, I'm also thinking the same filling would be good for peppers.

For stuffed mushrooms I use a breadcrumb/garlic and parsley mix, and some crispy bacon bits if I have cooking bacon then top with grated cheese. Peppers are good stuffed with rice or couscous and feta cheese, as are tomatoesSo, there are these boys,

My mum used to stuff peppers with ricey-nicey
I believe it was based on the Greek Yemistes (ye-mis-th-es)
She cooked finely chopped onion and garlic with a little minced beef, chopped tomatoes and oregano and then added uncooked rice. She stuffed tomatoes, peppers, courgettes, potatoes even. She arranged them in a deep Pyrex and then arranged extra rice mixture around the vegetables. Then added boiling water to just cover the rice. She put a lid on and baked it in the oven until the rice was cooked and the vegetables were tender.
It was absolutely delicious. Thank you for reminding me, I must make an effort to make these for OH this week

Hi Dave,
I stuff peppers with rice mixed with veg, herbs and spices and sometimes leftover chicken as well. I stuff mushrooms with breadcrumbs, garlic and onion, topped with grated cheese. I haven't done either for a while...I really fancy some now!

She added water to the level of the rice around the peppers. The steam cooked the rice inside the vegetables.0 -
I like to stuff peppers or mushrooms with some fresh breadcrumbs mixed with some fried mushrooms, onion and garlic - then add whatever needs using up in the fridge! could be some leftover salmon or ham, chicken or lamb, then add whichever herb goes best ie dill with salmon (or any fish come to that), rosemary if its lamb, sage for chicken and ham is lovely with thyme or parsley. then top with whatever cheese I have. then bung in the oven for about 40 mins at gas 4 (or less if I am using the oven at 6 for something else). I cant give exact amounts as I tend to do stuffed peppers or mushrooms just to use them up before they go off!0

I use a large flat mushroom and smear with pesto and cover with grated cheese then finish off under the grill until the cheese goes bubbly.
As for peppers I cheat slightly and use a packet of flavoured rice. I cook it then stir in something like tinned salmon then use these to stuff the mushrooms. I do a few at a time and freeze
