I also add a spoon of sugar to my tomato sauces. Turns out great.

I made a tomato sauce once by chopping up homegrown tomatoes and putting them in a pan with garlic chips, salt, pepper, 1/4 teaspoon of chili powder mix and some dried herbs (can't remember which ones we have in but there's some oregano in there) then just simmered it for 10 minutes and stirred occaisionally. Then I blended it all together and used it as a dip for wedges
