Chocolate Truffles - will they melt?

Hi
Im doing some baskets as christmas presents and really fancy trying my hand at making truffles but will they melt if not kept cold?
Also has anyone got any really good taste tested recipes I can find hundreds on the net but i was wondering if anyone has any recipes they can recommend.

if you make proper truffles with fresh cream they need to be kept in the fridge and they won't last that long even then.
i just melt dark choc and some cream and maybe a bit of butter together and a dash of whisky etc if wanted. pour mine into a shallow tray and pop in fridge to firm up/set. take small bits and roll into balls. you can then either roll them in cocoa powder or pop them back in the fridge to set a bit more and then dip them in any sort of chocolate to coat.
place in pretty little cases and job done

For my daughters wedding I made these http://bahava.wordpress.com/2008/03/11/white-chocolate-goodness-aka-oreo-truffles/, the bark is simply chocolate drops. The taste was devine but the first batch were too soft so I added approx 10oz of melted plain choc to the mixture. I then let it cool before I rolled them. Also before I dipped them I popped them in the freezer, ready rolled, to really chill them. I coated them with 2 coats of white choc then when hard I drizzled them with chocolate and finally sprinkled them with edible glitter. A bit of a fuss to make but well worth it. We kept them in boxes in the freezer and then I decorated the 3 wedding cakes with them.Nothing Changes if Nothing Changes0
