  • Some of my fave batter meals ....

Giant Yorkshires filled with meat/veg (great with left-over stew!)
    Toad-in-the-hole - with onion gravy
Savoury pancakes - filled with ricotta cheese and spinach; spicy minced beef; bacon and cheese; creamy chicken and mushroom; any left-overs I can use from fridge.
    Sweet pancakes
American-style pancakes (blinis) - great for breakfast or desserts
Spam fritters ;) - only joking (I hate them) but my mum often made them
    Potato fritters
Clafouti - a fruit base with batter topping

... ermmmmmm can't think of anymore atm but hope that gives you some ideas :)

Here's a recipe for potato cakes - i found on the internet and have tried and they taste like the genuine article.

    Potato Cakes
-peel and then slice 750gm large potatos very thinly
-put the slices on a plate and microwave for a minute
mix 2 cups S/R flour, 1 tsp salt and 1 teasp. pepper. make a well. Add 1 3/4 cup water. mix together to form a batter (thicken with flour if not reasonably thick)
coat potato slices with extra flour and dip into batter
    Fry until lightly golden
    Drain
Then refry again until a rich golden brown colour

Can someone help me with the measurements for pancake batter please? I have a large bag of plain flour left and would like to make pancakes tomorrow (usually use packet mix)

    hey tiff

i figured i couldnt go far wrong learning a tip or two from good old delia. ignore the fancy twiddly bits and just run with the basic recipe.

clearly explained, easy to follow, and the results were yummy :D

It's plain flour elona. Thought you needed self-raising for buns. Though i beleive you can make plain flour into self-raising by adding baking powder. Not right sure of quantities though.

Add 4 level teaspoons to each 225g / 8 oz plain flour, you can get away with less in stuff like fruit cakes but not sponges and fairy cakes :)

Apple or other fruit crumble? I always make a sort of toffee apple crumble by using eating apples. Peel them and core them, chop into chunks then fry in about 1/2 ounce of butter or marge and a large spoonful of golden syrup. This turns to a toffee-like sauce round the apples when you have stirred it round the pan for about 5 minutes..you can tell when it is done as it changes colour but dont let it go too dark! I like to add about a heaped teaspoon of cinnamon to it. Put it in a dish and put the crumble mix on top (4 ounces of flour, two ounces of marg and two ounces of sugar, rub these in together you can add chopped nuts or ground almonds if you like.) cook for about 30 mins in a hot oven..gas 5 you can do the same with pears
