cheesy pasta is easy and always popular - For 2 people you just boil 8oz pasta and make a cheese sauce by putting 1oz flour, 3/4 pint milk, pinch mustard powder, salt and pepper into a pan and whisking it together. Turn on the heat and bring to boil to thicken and then simmer and stir in 4oz cheese until melted. Pour over the pasta and put into a buttered casserole dish and top with some breadcrumbs mixed with a bit of grated cheese and herbs. Bake for 20 minutes till bubbly and crispy. Serve with green salad and follow with a fresh fruit salad. Or you could do jacket potatoes with cheese and chopped chillies, or vege mince bolognaise. Good luck!Jane

There are loads of recipies on the recipie index on here - sorry I don't know how to do links - it depends on what sort of meal it is really. Are you looking to do something 'posh' or just a really nice everyday, home cooked meal? If it's the latter I don't think you can go wrong with veggie sausage, mash, onion gravy & veg. It's one of my favourites.
You could also try a curry - a tin of chickpeas, chopped onions, cubed potatoes, a curry paste (Sharwoods balti is good) & a tin of tomatoes. Serve it with rice & either naan bread or chapattis.
Have a look at the recipie index for some really good ideas though.0 -
Was going to post last night/early this morning, but no idea of what you really want to do.
When do you have to cook the meal? What have you got in already? Are you looking to impress? Is it a special meal, or just a run of the mill tea (but you still want to look good)?
Are there likes and dislikes? It's the latter you need to be concerned with obviously! Although am a vegetarian myself, there are a few veg which I will not cook, but will eat if sat on my plate to be polite! How many veggie dishes are you looking for? Do you want a starter, main course and pudding?0 -
