Have looked on the mega-indexed thread and haven't been able to find what I am looking for, but have found lots of inspiration for meals that I have jotted down for next week.
We are off shopping tonight and as usual I have wrote down a list of meals for the week to stop us from buying excess, obviously these are main meals and don't include breakfast and lunch.
Just wondered what everyone's opinion is and if anyone has any further suggestions as we are trying several new things:
(not in any order)
1. Sunday Lunch (not me cooking, off to parents for dinner)
2. Butternut Squash Soup
3. Sprats and Couscous
4. Jacket sweet potatoes with vegetables
5. Chicken jambalaya with brown rice
6. Corned beef hash and beans
7. Winter warmer red lentil soup

Must try sprats, how are you going to cook them ?
I think those meals sound lovely, lots of seasonal veg, very Autumnal sounding :T0 -
That looks great:T I'll be popping over every night about 5:30 ish OK:rotfl: . I notice there are no puddings on there:eek: If you can get away without making a pudding do so because once they get used to them there is no going back. My three kids came out of the womb demanding fruit crumble and custard and have been gobbling puddings up ever since.
Here's my plan for this week. It only covers 5 days because it is a going to the coast weekend where I am off duty from OS activities LOL If in the emids I always make soup on Saturday (Oct - Mar) with HM crusty bread.
Mains
HM Steak Pie, Roast potatoes and veggies
Baked Cheddar and Tomato Rissotto
HM Veggie Curry, Rice and Naan
Cod Morney, chips, salad
Lemon Roasted Chicken, Lemon and Mint Cous Cous
Puddings
Rapsberry Jelly, Raspberries from the freezer, Creme Fraiche
Banana Custard
HM Apple and Blackberry Crumble and Custard
HM Marmalade Cake (made 3 - to eat, for packed lunches, for freezer)

Think I am going to shallow fry them but not sure yet, I have never done them before
MATH, I am trying to avoid puddings because I will end up looking like a pudding :rotfl:
Have stocked up on Pomegranates because we love them and going to buy lots more fruit tonight0 -

Mine for this week was as follows...
Sunday - roast chicken with all the trimmings (yorkshires did go a bit wrong though :rolleyes:)
Monday - cheat's chicken cassoulet (recipe from here) & left over roast potatoes from Sunday (very easy and made enough for four portions. Since there are only two of us, the rest has gone in the freezer. I reckon this cost me less than £2.00 to make in total).
Tuesday - was going to be kedgeree (never made it before, but there is a simple recipe in Tesco's lastest Food Club mag) but then we were invited out for dinner, so this will be on the meal plan next week instead.
Wednesday - lasagne, garlic bread & salad
Thursday - omelettes, salad and wedgets
Friday - tuna and tomato pasta bake
Saturday - chinese - but I'm cheating, as I have bought the S&S sauce for the chicken and black bean sauce for the steak (thin cut) in jars. I've also bought prawn crackers and spring rolls :eek:0 -
My meal plan for this current week is:
Sunday: Roast chicken and all the trimmmings - remaining chicken used to do DH's lunch for the whole week
Monday: Beef stew and dumplings
Tuesday: Spag Bol - remains for my lunch the next day
Wednesday: Sausage and pasta - remains for my lunch the next day
Thursday: Ranchero Pie
Friday: HM Beefburgers and wedges
Saturday: HM PizzaSquares knitted for my throw ~ 90 (yes!!! I have finally finished it :rotfl: )Squares made for my patchwork quilt ~ 80 (only the "actual" quilting to do now :rotfl:)0 -
BAKED CHEDDAR AND TOMATO RISSOTTO
I clipped this recipe from The Good Food Magazine about 15 years ago. It isn't a 'real' rissotto really, more a cheats version so you get all the taste but without the constrant pouring and stiring. The recipe doesn't even call for rissotto rice, just bog standard long grain so it's as cheap as chips too. This recipe is supposed to feed 4 but I need to double it up to feed 2 adults, a 10, 9, and 6yr old. But then we're right pigs at Chez MATH. LOL
Hope you like it.
2 tbsp oil
1 red pepper, sliced
1 garlic clove, crushed
10 oz LG rice
1 3/4 pts veg or chicken stock
1 can chopped tomatoes
4 oz Cheddar, cubed (I use double this amount LOL)
chives and salad leaves to serve
1. Preheat the oven to 180 c/ gas 4. Heat oil in a large frypan, then cook onion and pepper for 5 mins until soft and golden. Add garlic and cook for a further minute.
2. Stir in the rice until coated in oil, then add stock and tomatoes, season and bring to the boil, simmer for 5 minutes until some of the liquid has been absorbed.
3. Pour into a shallow oven dish (keep in the fry pan if oven proof). Submerge half the cheese cubes into the mixture and leave the rest on the top and bake in the oven for 30 minutes.
The dish firms up as the mixture absorbes more fluid and you get these delicious melted cheesy lumps inside and crusty browned cheese on the top.
To ring the changes (due to family demand, I make this dish at least twice a month) I sometimes chuck in, sweetcorn, chopped courgette or chopped ham.Life's a beach! Take your shoes off and feel the sand between your toes.0 -

Heres mine for this week!
Mon - HM cottage pie and home grown runner beans, peas and baby carrots
Tues - Sausage and bean casserole with sweet potato andd swede mash
Wed - HM burgers, mushrooms, baked beans and chips(lots of HP sauce)
Thurs - HM lasagne, salad and potato wedges
Fri - chicken curry and rice
new week begins on Sat and havent done the plan yet! job for this evening I think!
We also have puds quite a bit. These are usually HM apple crumble, bread and butter pudd, steamed sponge puds, all with ice cream or custard.Do what you love :happyhear0
