Mortgage protection insurance

At the beginning of this year I was unemployed for several months. So, because I took out mortgage protection cover that covered me no matter what happened to me I tried making a claim to cover my mortgage payments whilst unemployed. However, last year I was employed by a foreign employer out of the country. I never received a pay statement I was told that I had been paid and I had. But, when I did try claiming against my policy they requested proof that I had been employed for 6 months prior to my claim by producing pay statements.
Even though my mortgage and insurance are with the same building society providing bank statements proving my wages for the last year was not adequate. They informed me that the proof was to actually prove that I had paid National Insurance contributions which because of the work and company based overseas did not happen. I had paid all my insurance direct debits every month without fail but this did not count. They informed me that it was in the 'small print' that N.I. contributions had to be paid.
My question for you now is - What is the best Mortgage Cover can I get to cover me for Critical illness , sickness and unemployment without having to pay N.I. contributions being mandatory for the policy to be valid as I am expecting working abroad in the near future or simply what is the best way for me to protect my mortgage if working overseas ?!
