HM "Tabasco" sauce - anyone have a recipe

Hi, Our chillis have done really well this year. I have them strung up all over the kitchen, drying. I've made chilli sauce, chilli jam, cayenne pepper... Now I'd like to have a go at something like "Tabasco".

Does anyone have a recipe please?

I have just made chiili sherry which is the 18th century English version apparently. I jabbed the chillis with a darning needle and put them into sterilised vinegar bottles - about 10 in each and then filled them up with fino. Leave for a few months and .....Apparently it works like Tabasco in that you only need a few drops.

I make chilli sherry too. It's lethal to taste on it's own, but there's always some idiot who wants to try it. :rotfl:

It's fantastic added to soups and stews and gives them a lovely kick.
