Mince meat recipe (sweet) is no booze or suet possible?

Ok OH loves mince pies, but he has been dianosed with an inherited condition which means he has gall bladder problems and high cholesterol.
So we have cut down on saturated fats and he has stopped drinking any alchol as it irritates the gall bladder.
So is there any way of making a homemade mincemeat that doesn't have booze or fat in it?

Suet free mince meat - notes on the recipe say apple juice can be used instead of cider
